Middle Eastern Food, can be quite flavourful; however I should point out this is a Recipe that I created, based on a few recipes here and there.

To make your own Persian Rice Blend: The Ingredients on my packet is Dill, Coriander, Parsley, Onion, Chives and Raw Garlic

If you don’t have access to a Middle Eastern, or Indian Grocer, here are some links:- Saffron Strands, Saffron Powder/Colour. As the Persian Rice Blend is usually sold Frozen, Zaatar is a good alternative, but only use 1 TBSP.

Ingredients

Method

  1. Wash Basmati Rice, to remove any starch. Soak for a minimum 30 minutes , and wash again.
  2. Dissolve 1 Chicken Stock cube in 200mls of water, or use pre-made chicken stock
  3. Boil 1 cup of Basmati Rice, according to your preferred method, using Stovetop, Microwave, or Rice Cooker. Top up the 200mls of stock with more water or chicken stock if required. I used a Joseph Joseph Rice Cooker, and cooked in the Microwave.
  4. Once cooked, separate grains to remove clumps, and place in fridge for 1 to 3 hours.
  5. Place Saffron Strands between Ice Cubes, till ice has melted. Put aside.
  6. Heat Wok (or large Pan), and add Vegetable Oil to high heat.
  7. Add 50mls of water to Rice, and separate grains with a large bamboo spoon (or similar)
  8. Lower Heat. Add Rice to Wok, and stir with Bamboo Spoon, covering grains with Oil. Do this for 1 to 2 minutes (DO NOT OVERCOOK, as Rice will be too Dry). Add Persian Rice Blend, Saffron Strands (Including water), Green Onion. Stir together, then add Saffron powder and stir again.
  9. Serve with Tabouleh, Falafel and your choice of Meat. If you have access to a Middle Eastern Grocer, try some of the frozen products such as Kibbeh, Falafel etc
