White Garlic Pizza Sauce

This is the white sauce I use for pizza toppings. This will make roughly 300ml (or, 3 ladels, 3 pizzas). Can be individually ziplock bagged and frozen for up to 3 months.

Perfect for my Fig and Pig pizza recipe... that I haven't posted yet. I'm a bastard.

Ingredients

Method

  1. Place a small saucepan on medium-low heat, add the olive oil and the minced garlic. Cook for 1 minute, whisking constantly so the garlic doesn’t brown.
  2. Add the Italian seasoning, salt and pepper and stir. Add half of the milk and stir.
  3. Sprinkle in the flour and whisk quickly until it is a thick paste. Let cook and bubble for another 1-2 minutes.
  4. Stir in the remaining milk, whisking constantly. Once incorporated, add the cream.
  5. Add the cheese and stir, then turn the heat to low and let simmer 5-10 minutes to thicken.
  6. Serve warm or refrigerate in an airtight container for up to 5-7 days or, freeze for up to 3 months.
