This is a very common ingredient in Indian cuisine. Equal parts Garlic and Ginger. Making it yourself from fresh ingredients is amazing. Sod that store-bought stuff, it's the worst. Keep it in the fridge until you need it.

Method

  1. Mix together all of the ingredients except the water.
  2. Pulse into a puree until you're satisfied with the texture--adding water as needed (no more than 100mls).
  3. Spoon into a sealed container and store in the fridge. It will keep for a few weeks.
